Ingredients:
- 250 g of flour
- 200 g of butter at room temperature
- a pinch of salt
- strawberry jam
- 280 g of icing sugar
- 6 tablespoons of lukewarm water
- 2-3 drops of pink food coloring
Preparation:
In a bowl mix the flour, butter and salt until you get a dough ball, put the dough in cellophane and let it rest in the fridge for 15 minutes. Meanwhile turn the oven to 180 degrees and let it heat up.
After 15 minutes, roll out the dough until approximately 3mm and cut the shapes of your choice with a cookie cutter in an even number of biscuits because it takes two to make a Napolitaine. Put a baking sheet on the baking tray and cook the biscuits for 20 minutes.
After that, let them cool completely and put a teaspoon of jam on a biscuit and cover with a second biscuit. Do the same with the remaining biscuits.
For the frosting, mix the icing sugar with water and the dye. Put the filled cookies on a grill (for example the oven grill) with a backing sheet under the grill so that the excess of frosting falls on it and you can use it again on the remaining ones. Take a tablespoon of frosting and cover the biscuit and let dry for 30 minutes.
Enjoy the Napolitaine with a good tea.
