A variant of the Caribbean cod accra or we replace the cod by the salted fish found more easily in Mauritius.
Ingredients for about 30 salted fish croquettes:
- 150 g of salted fish
- 250 g of flour
- 1 packet of baking powder (11 g)
- 1/4 teaspoon of turmeric
- 1 pinch of salt
- 1/4 bunch of chopped coriander
- 1 shallot chopped
- 4 green onions chopped
- 270 ml of water
- oil for frying
Preparations:
In a saucepan of boiling water, desalt the salted fish for 10 minutes. Rinse with cold water, remove the fish bones and crumble. Reserve.
In a large bowl mix together the flour, salt, turmeric and baking powder. Add the crumble salted fish, coriander, shallots and green onion and mix. To finish add the water little by little while mixing until obtaining a thick batter.
In a large saucepan or fryer heat the oil for frying. With a tablespoon take a little batter and using another spoon push the batter into the hot oil. Cook the salted fish croquettes until golden brown.
Take them out of the oil and put them on paper towels to remove the excess oil. Once all the salted fish croquettes are cooked sprinkle them with lemon juice. Serve hot with chilli sauce.
