Salmon rillettes


  • 150 g fresh salmon
  • 100 g smoked salmon
  • 80 g mascarpone (or cream cheese)
  • The juice of half a lemon
  • A small onion, chopped
  • Half a bunch of chopped chives


Put the fresh salmon in a pan of water and bring to boil for 10 minutes after the boiling starts.

In the mean time chopped the smoked salmon put it in a mixing bowl with the lemon juice and onions leave aside. Once the  fresh salmon is cooked put it out of water, let cool and remove skin and bones and crumble by hand.

Add the cooked salmon in the bowl, also add the mascarpone, pepper and chives and mix well. Taste and add a little salt if necessary. Leave at least 3 hours in fridge before serving on grilled toast.
