INGREDIENTS:
- 350g chicken breast
- 1 tablespoon light soy sauce
- 1 tablespoon rum
- 1 tablespoon peanut oil
- 180g flour
- 1 pinch of yellow dye
- salt and pepper
- frying oil
PREPARATION:
Cut the chicken into cubes. Add soy sauce, rum, pepper and marinate for 2 hours.
Mix flour, salt and peanut oil. Stir in water gradually. Mix well, the dough should be homogeneous and quite fluid. Add the dye.
Heat oil bath. Dip one by one the marinated chicken pieces in batter and slip into hot oil. Do not put too much at once so that the croquettes do not stick together. Separate them occasionally with a wooden spoon.
Fry until golden. Drain and serve with tomato chutney or crushed chili.
