Ingredients for 2 people:
- Rice ( basmati or thai )
- A chicken breast
- 3 dried shitake mushroom
- 2 Chinese sweet sausage
- 1 tablespoon cornstarch
- 2 tablespoon oyster sauce
- 2 tablespoons soy sauce soup
- 1 carrot
- 50 g bamboo shoot
- 2 eggs
- 2 pak choi ( or 1/4 Chinese cabbage )
- 2 cloves of garlic
Preparation:
To start put the shitake in hot water for about thirty minutes to rehydrate them, then put the rice to cook in the rice cooker, if you don’t have a rice cooker and use quick-cooking rice, you should wait until the end to cook the rice so it won’t be cold.
Then, we have to prepare the ingredients :
Mince the chicken. Slice the Chinese sausage. Mince the Pak choi. Cut the carrots into thin slices. Rinse and squeeze the shiitake to get most of the water out then slice them in small pieces. Crush the garlic.
Heat a wok or a pan with a little oil, fry the chicken in the wok : once the chicken took a nice golden color, add the sausages, cook for a few minutes then add the vegetables (pak choy , shiitake , carrots ) and garlic mash then add salt and pepper to tast.
In a bowl mix 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 3 tablespoons of warm water and 1 tablespoon of cornstarch. Pour this mixture over the chicken and vegetables stir well and cook for 3 minutes.
In another saucepan fry the eggs on both sides (one egg per person).
Once the eggs are ready, take a bowl per person put an egg at the bottom, sunny side down, then put some chicken and vegetables with a little sauce on it and fill the rest of the bowl with a portion of cooked rice to match your appetite.
To serve, put a plate on the bowl and gently flip up the plate and bowl without separating them. Turn the bowl left and right by a quarter turn and lift it slowly so that the preparation does not collapses while removing the bowl: it’s done

tomato and coriander chutney:
The Bol Renversé is often accompanied by a Tomato and Coriander Chutney, a very simple, fresh and tasty sauce.
To prepare it, take two tomatoes, a small shallots, 5 coriander sprig and some chilli to your taste. Just put all that in a food processor and mix until liquid. Add a little salt and peper and serve mix it with your rice to a fresh and spicy taste.
