Chicken buns : Pow




For the dough:

  • 225 g of flour
  • 1 teaspoon of yeast
  • 125 ml of water
  • 15 g melted butter
  • 1 tablespoon of sugar

For the filling:

  • 150 g ground chicken
  • 25 g of dried shiitake
  • 1 tablespoon of sesame oil
  • 1 teaspoon of crushed garlic and ginger
  • 3 tablespoons of tomato puree
  • half a finely chopped onion
  • salt and pepper


For the dough :  combine all the ingredients. Knead the dough until it becomes soft and let stand for one hour. After an hour the dough should have doubled in size.

For the fillings : Put the mushrooms to soak in warm water for 30 minutes. Drain and finely chop them. Heat the sesame oil and saute the crushed garlic and ginger, then add the mushrooms, chicken, tomato puree and onion. Cook for 10 minutes. Season with salt and pepper and let cool.

Knead the dough again on floured surface and divide into 8 balls. Roll out each ball into a large circle and place 2 tablespoons of stuffing in the center and pinch the ends to the center to form a ball. Place each ball individually on a lightly oiled parchment paper. Cook the pow in a water bath for 15 minutes.
