Gato Patate

INGREDIENTS FOR 20 CAKES:

  • 300g sweet potato
  • 150g flour
  • 100g of grated coconut
  • 80g sugar
  • 1 teaspoon vanilla extract
  • oil for frying

PREPARATION:

In a bowl put the grated coconut, vanilla extract, sugar and let stand for 1 hour.

Wash the sweet potatoes and boil then for around 30 minutes (it is ready when a knife goes easily into a sweet potato). Then remove them from the water, peel them, put them in a large bowl and mash them to a smooth paste.

Add the flour into the potato and mix by hand until the flour and the potato form a dry dough. Add more flour if needed.

Make 20 balls with the dough. Roll them (with a rolling pin) one by one to round them. Place in center of each ball a pinch of grated coconut. Fold in half and seal the edges with a fork. Fry in hot oil until it is golden brown.

Let cool and enjoy with a good tea.
