- 1kg potatoes
- Filling ( tuna, quarters of hard boiled eggs)
- 1 onion, finely chopped
- 1 bunch of chives, chopped
- a knob of butter
- 2 tablespoons milk
- 2 beaten eggs
- frying oil
Peel the potatoes and put to boil in a large pot filled with water for 30 minutes. Test with a knife to see if it’s cooked or not if the knife fits easily it is cooked otherwise continue cooking 5 to 10 minutes.
Until the potatoes cook boil the eggs.
Once potatoes are cooked empty water and crushed with a press puree to get a good consistency. Add butter, milk, onions and chives mix well put a little salt and pepper and separat in 2 parts .
Heat a pan with cooking oil .
Take 3 deep dish, put flour in one, beaten eggs in another and the breadcrumbs in the last.
In the first half of potato flakes on the tuna and mix well. Put flour in your hands then make a ball with the potato, then pass in flour, egg and breadcrumbs the fry in hot oil. Fry on all sides until it is cooked and set aside on paper towels .
Potato Croquette with Egg
In the second half put flour in your hands then flattened the potatoes then put an egg in the center and close to form a quenelle (long form) . then pass in flour , egg, breadcrumbs and fry in hot oil. Fry on all sides until it is cooked and set aside on paper towels .
Repeat until you run out of potato and egg .
