- 250 g of salted fish
- 1 onion
- 2 chillies
- the juice of a lemon
- 2-3 sprigs of coriander
- 4 tablespoons of vegetable oil
In a saucepan of boiling water put the salted fish and cook for 5 minutes. Remove the salted fish from the water, rinse with cold water. Crumble and remove the fish bones. Reserve.
Slice the onion and cut the sprigs of coriander. Reserve. In a mortar crush the chilli, put the onions and gently press the pestle so as to mix the onions with the chilli but without crushing them.
Put the onion and chili mixture in a large bowl, pour the lemon juice and mix. Reserve. Heat a frying pan with the tablespoons of oil. Once the oil is hot fry the salted fish until all the pieces become a little crispy.
Pour the fried salted fish pieces and all the cooking oil over the chili / onion mixture. Mix, add the coriander and mix again. It’s ready. Enjoy with rice and dry grains (lentils, dhall, butter beans or dry beans)
