Cut the mango into thick slices. Reserve. In a skillet, heat the oil. Once the oil is hot add the curry leaves, turmeric, mustard seeds and chillies. Spice up the spices and as soon as the mustard begins to wriggle add the slices of mango.
Mix so that the slices of mango are wrapped with spices and cook on low heat for 5 minutes. Pour the water, the sugar and the pinch of salt, mix and let simmer over low heat for 20 minutes. Stir occasionally.
Increase the heat and cook another 5 minutes over medium heat. It's ready. Let cool and enjoy as a dessert after a 7 curry dish or curry barry.
