ingredients:
- 300 g of flour
- 170 ml of water
- 40 ml of oil
- 1 tablespoon of sugar
- 1 tablespoon of baking powder
- 1 pinch of yellow food coloring
- Salt
- Oil for frying
Preparation:
In a large bowl, mix together the flour, the yellow food coloring, the baking powder, the sugar and the salt. Then add the oil and mix it with the flour.
Add the water little by little while kneading with your hand. Knead well until you get a soft dough but that does not stick in your hand, add a bit of floor if needed. Cover the dough with a cloth and let it rise for 30 minutes.
After 30 minutes, make small balls with the dough and set aside. In a small bowl put a little flour. Pass the small balls of dough in the bowl of flour and finely flatten them with a roller pin. Repeat with remaining dough ball.
In a deep fryer or large saucepan, heat the oil for frying. Once the oil is hot fry the “Merveilles” one at a time on both sides. When it starts to have a golden color. remove them from the oil and place them on a paper towels to remove the excess oil. Let cool your Merveilles slightly before serving them with a hot coriander sauce or sweet tamarind sauce.
Coriander sauce:
In a blender, mix together half a bunch of coriander, 3 red chillies, half an onion, salt and a little water.
Tamarind sauce:
In a blender, mix together 2 tablespoons of tamarind sauce, half a red chilli, 1 tablespoon of sugar and a little water.
