Pumpkin casserole


  • 500g pumpkin, cut into cube
  • 1 onion, chopped
  • 1 clove garlic
  • 1 teaspoon ground ginger
  • 1 sprig of thyme
  • 1 tablespoon chopped parsley
  • 1 teaspoon mustard seed
  • salt and pepper


In a pan heat a tablespoon of oil and sauté the onion, garlic and ginger few minutes. Then add the pumpkin, thyme, parsley, salt and pepper and mix. Simmer over medium heat for 20 minutes covered.

If the pumpkin is easily crushed with the back of a spoon (if not cook a little more) add the mustard and cook for 3 minutes and it’s ready.
