INGREDIENTS:
- 500g of ourite (octopus)
- 1 medium onion
- 3 cloves of garlic
- 3 medium tomatoes
- 1 piece of ginger
- 4 cloves
- 1 cinnamon stick
- 1/2 liter of red wine
- 1/2 tsp. Coffee saffron powder (turmeric)
- a little chopped cilantro for decoration
- salt and pepper
PREPARATION:
Thoroughly clean the octopus then cut it into medium sized pieces before putting it to cook in lightly salted water until it becomes soft.
Finely chop the onion and cut the tomatoes into small pieces. Crush the garlic and ginger and fry in oil onions for 2 minutes before adding the crushed garlic / ginger mixture.
After a minute, add the tomatoes, saffron, cloves and cinnamon. Stir well before adding the pieces of octopus, pepper, salt and wine. Then put a lid on the pan and let your salmi of octopus cook over medium heat for about 30 minutes. It must remain very little sauce at the end of cooking. Taste and adjust the seasoning if necessary
Once ready, sprinkle with chopped coriander and serve with rice and a salad.
