Mini lemon cake

Mini lemon cake


  • 275 g of flour
  • 100 g of sugar
  • 1 yoghurt of 150g
  • 100 g of melted butter
  • 4 eggs
  • 5 g of baking powder
  • Zest and juice of 2 lemons
  • 30 g of icing sugar

For the icing:

  • 250 g of mascarpone
  • 200 g of white chocolate
  • Food coloring (here I used red, blue, yellow and green)


Beat the eggs with the sugar until the mixture whitens. Add the yogurt and whisk. Add the flour and baking powder and mix. Finally add the melted butter and lemon zest, mixing well.

Grease mini cake molds and place the dough. Put to cook in a pre heated oven at 200 ° for 35 minutes.

Mix lemon juice and icing sugar. Once the cakes are baked make small hole with a skewer stick and brush with the icing sugar and lemon mixture. Leave to cool.

Melt the white chocolate and let cool completely. When the chocolate is ready mixed with the mascarpone to have an airy ganache. Divide into four and in every part put some food coloring. When the mini cakes are completely cool decorate with the ganache.
