Ingredients for 6 glasses
- 250g of mascarpone
- 3 limes
- 3 eggs
- 12 spoon biscuits
- 90g of sugar
Take the zest of one lemon and set it aside, then squeeze the three lemons to get their juice in a glass or a bowl.
Separate the whites from the eggs’ yolks in two bowls. Add the sugar into the egg yolks and whisk vigorously to whiten them. Then add the mascarpone and whisk again.
Once it’s well mixed, add the lemon juice and 3/4 of the lemon zest and mix again, the rest of the zest will be used later to decorate the tiramisu.
Whisk the egg whites with a pinch of salt until firm then add gently the egg whites to the preparation lifting gently with a spatula.
Once everything is well mixed, take the glasses and put a biscuit at the bottom, add a layer of cream, then add another biscuit and finish with a layer of cream. Repeat the same operations in the 5 remaining glasses.
Put in the fridge for at least 3 hours before serving, it’s even better if it’s prepared the day before eating.
Decorate your Lemon Tiramisu with the lime zest set aside and serve it cold.
