Potato Cheese Balls

 

INGREDIENTS:

  • 500 g of potato
  • 150 g of Kraft cheese or other equivalent cheese
  • 70 g panko
  • 70 g of sweet corn
  • 2 eggs
  • 1 teaspoon of powdered nutmeg
  • salt and pepper
  • oil for frying

PREPARATION:

Peel the potatoes and steam them for 30 minutes. Cut the cheese into small cubes and reserve them.

Once the potatoes are cooked, mash them with a potato masher or a fork. Beat the eggs and mix in the mashed potatoes. Then add 30 g of breadcrumbs keeping the rest of breadcrumbs for the end.

Mix well. Add nutmeg, salt, pepper, and sweet corn and mix before mixing again. Let it rest for 5 minutes while the mixture cools a little.

Put the remaining breadcrumbs in a baking pan and heat the oil bath. Take some mashed potatoes, put a cheese cube in the middle and make small balls then pass each potato balls in the breadcrumbs. I use panko breadcrumbs because I think it brings more crisp but another breadcrumb can be used .

Once the oil is very hot, fry the Potato Cheese Balls until they are golden brown. Let them drain on paper towels before enjoying them hot or warm.

    • I don’t live in mauritius but I know that you can find it in intermart (bagatelle, ebene) in the chinese aisle, Sik yuen curepipe, or any chinese shop.
