INGREDIENTS:
For the dough
- 500 g flour
- 75 g softened butter
- 90 g sugar
- 200 ml of warm milk
- 10 g of dry yeast
- 2 eggs
- 1/2 teaspoon salt
For the filling
- 40 g of coconut powder
- 60 g sugar
- 5 tablespoons of water
- 1 teaspoon of vanilla extract
PREPARATION:
In the mixer bowl combine the flour, salt, sugar, eggs, yeast, milk and butter. Knead until smooth and blended. Form a ball with the dough and put it into a floured bowl and cover with a towel to let rise for one hour.
Meanwhile in a saucepan put the coconut, sugar, vanilla extract and water. Mix and let reduce over low heat, stirring constantly. Set aside in a bowl.
On a floured surface roll the dough and cut dough into 10 equal parts. Flatten each piece by hand and put a teaspoon of coconut mixture in the center and fold the edges toward the center to close. Crimp the edges with your fingers and roll into a round shape.
Place a sheet of parchment paper on a baking tray and place the buns, spacing, cover with a cloth and let stand one hour. Preheat oven to 200ºC. Brush the buns with milk. Bake for 12 minutes until they are golden.
Let cool and eat with hot tea for breakfast or lunch
