INGREDIENTS:
- 150 g of salted fish
- 2 sweet chinese sausages (optional)
- 100 gr green peas
- 2 carrots
- 2 beaten eggs
- 250 g basmati rice
- 4 green onions
- 3 tablespoons white wine
- 4 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- pepper
PREPARATION :
Start by cooking the rice in your rice cooker then boil for at least 5 minutes the salted fish before crumbling it with a fork and removing the fishbones.
Peel and cut carrots into small cubes and clean and slice the green onions in slices then reserve.
In a saucepan, cook the omelet on both sides and cut it out into small stipes before putting them aside. Cut the chinese sausages in small slices and them set aside.
Add to the pan two tablespoons of olive oil, heat over high heat and once the temperature is high enough, fry the salted fish for 5 minutes so that it’s golden brown.
Remove the salted fish then sauté for 5 minutes the sweet sausages, the carrots and the green peas. Then add the salted fish, the white wine, the light soy sauce and mix well before adding the cooked rice. Mix everything together and then add the dark soy sauce, the omelette and the green onions on top.
Your Fried Rice with Salted Fish is ready, serve it hot in a bowl with a little tomato chutney and garlic sauce.
POSSIBLE ALTERNATIVES:
As often in Mauritius, this dish can be prepared with several variations, for example adding chicken, shrimp or removing the chinese sweet sausage.
