Mauritian Naan with Meat and Cheese

Ingredients for 8 naans:

  • 500 g of flour
  • 6 g of instant yeast
  • 50 g of milk powder
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon of powdered cumin
  • 40 ml of olive oil
  • 1 egg
  • 200 ml of warm water

For the stuffing:

  • 350 g of ground beef (or the meat of your choice)
  • 1 medium onion
  • 1 clove of garlic
  • 1 teaspoon of turmeric powder
  • 200 g of grated cheddar or gruyere cheese
  • 1/2 bunch of coriander
  • salt and pepper
  • 1 egg for gilding
  • white and black sesame seeds

Preparation:

In a large bowl mix the flour, milk powder, salt and sugar. Add the yeast and cumin and mix. Add the water little by little while kneading. Add the egg, and start the kneading process. Add the oil and continue kneading to get a soft dough that does not stick. Cover the bowl with dough and allow to grow for 1h30 to 2h.

While waiting that the dough is ready we prepare the stuffing. Peel and cut the onion into small cubes and set aside. Peel and chop the garlic clove and set aside. Chop the coriander and reserve.

In a pan warm up a tablespoon of vegetable oil. Brown the meat for 2 to 3 minutes. Add the onions and garlic, mix and cook for 5 minutes. Add the turmeric, salt and pepper, mix and cook on medium heat for 10 minutes. Add the coriander mix and it’s ready. Let cool while waiting for the dough to be ready.

When the dough has doubled in volume remove it from the bowl and knead it slightly. Divide it into 8 equal pieces. Separate the meat into 8 equal parts. Separate the cheese into 8 equal parts.

Using the rolling pin, roll the dough in a strip of about 20 to 25 cm, then put a portion of meat on the dough and a portion of cheese on the meat. Close the dough on the filling by sealing the whole side with your fingers so that you have a long tube. Roll the stuffed dough into a snail and place on a baking sheet lined with baking paper.

Make the same steps with the remaining ingredients and space each naan on the baking tray. Once all the naans are ready covere them with a cloth and let them grow for 1 hour.

Heat the oven at 180 °. Whip the egg and brush each naan. Sprinkle with sesame seeds. Cook in the oven for 30 minutes. Leave to cool a little before eating.
