Stir Fry Beef With Szechuan Sauce

Ingredients for 4 people :

  • 500 g of beef
  • 1/2 teaspoon of light soy sauce
  • 1/2 teaspoon of dark soy sauce
  • 1 1/2 tablespoon of cornstarch
  • 1 tablespoon of white wine
  • 3 tablespoons of sesame oil
  • 1 carrot
  • 2 celery stalks
  • 20 g of fresh ginger
  • 6 green onions
  • 1 tablespoon of sesame seed

For the sauce :

  • 1 clove garlic, chopped
  • 1/4 teaspoon of 5 spices
  • 1/2 teaspoon crushed red chili flakes
  • 1 tablespoon of brown sugar
  • 1 teaspoon of vinegar
  • 2 tablespoons light soy sauce
  • 1 tablespoon of water

Preparation :

Cut the meat into strips, put in a bowl and add the white wine and soy sauces and mix. Then add the cornstarch and mix again. Reserve and marinate for 30 minutes.

Peel the carrot and cut into julienne and set aside. Peel and cut the ginger into thin julienne and set aside. Slice the celery stalks in julienne and set aside. Cut the green onions into sections and set aside.

In a small bowl mix together all the ingredients for the sauce and set aside.

Heat a large frying pan with 2 tablespoons of sesame oil. Once the oil is hot add the beef strips and cook a little before stirring. Once the meat is cooked transfer them to a plate. Add a tablespoon of sesame oil to the pan and saute together the celery, carrots, ginger and only the white part of the green onions.

Cook for 5 minutes, stirring occasionally. Put the meat back in the pan with the green part of the green onions and the sauce. Stir over high heat for 2 minutes. It’s ready. Sprinkle with sesame seeds when serving with rice.
