- 1.5 kg of half-ripe papaya
- 1 kg of cane sugar
- 2 vanilla pods
Peel the papaya, remove the grains and slice into the length. Wash the pieces of papaya. In a pot put the pieces of papaya and cover with water just enough to cover the pieces. Put the pot on medium heat and cook for 35 minutes.
Once the 35 minutes have elapsed split the vanilla pods in 2, add to the pot and cook for 5 minutes. Add the sugar, mix gently and let simmer on low heat for 1h30. Stir gently from time to time.
Remove the vanilla pods and enjoy warm or cold.
