- 250 g of small pink shrimp, peeled
- 3 green bananas
- 1 chopped onion
- 2 chopped tomatoes
- 5 curry leaves
- 2 tablespoons of curry powder
- 2 cloves of garlic
- 1 piece of ginger
- 6 sprigs of coriander, chopped
- Salt and pepper
In a mortar, crush together the garlic and the ginger. Then add the curry powder and a little water and continue to crush until you get a thick paste. Peel and slice the green banana then keep them aside.
Heat a pot with a tablespoon of oil and fry the onions. After a minute add the curry leaves, the curry paste and half a glass of water. Then cook it for 3 minutes.
Add the shrimps and tomatoes, cover and simmer for 5 minutes. Finally add the banana’s slices, salt and pepper, stir and simmer, covered for 10 minutes over medium heat.
Sprinkle your Green banana curry with shrimps with the chopped coriander and serve it hot with white rice.
