- 200 g of fresh grated coconut
- 200 ml of water
- 150 g of sugar
- 1 teaspoon of vanilla extract
- Food coloring
In a saucepan over medium heat make a syrup with water and sugar. Turn occasionally until the syrup thickens.
Add the vanilla and coconut and mix well. Let reduce slightly and add food coloring if you want to do several colors the mixture must be separated equally according to the number of color you want and keep them aside for the time you cook each color.
Stir continously until full absorption of the syrup. Make small piles on a parchment paper and put to dry in the oven for 10 minutes at 180 °.
Remove the gato coco from the oven and let them cool completely before serving.
